August is here and so is the HEAT. This past week we hit our first triple digit day, and I’m ALREADY over it. Although Oregon doesn’t get quite as hot as some states, the fact of the matter is that most of us Oregonians don’t have air-conditioning since it’s not necessary most of the year. But man oh man, do I WISH we were boujee enough to have AC during these little heat spells…

So because turning my oven on was the absolute LAST thing I felt like doing last week, I decided to stick with a no-bake recipe. Better yet, something that didn’t even require a stove! That’s when I landed on the perfect no-bake treat…

This Nutella Rocky Road is loaded with all kinds of deliciousness! Rich dark chocolate, luscious Nutella, fluffy marshmallows, and crunchy toasted almonds…these humble little squares are INCREDIBLY addictive. 

Even though these Rocky Road treats are traditionally a Christmas/winter holiday treat, I was NOT going to let that stop me from enjoying them during the summer. Besides, wouldn’t it make more sense to make these no-bake treats during the hotter months when you don’t want to use the oven or stove? Also, I don’t think there’s a rule that says you can’t enjoy holiday treats during the non-holiday months. And if there is, just call me a REBEL.

Seriously, you’re not going to find an easier treat to make than these. It’s a one-bowl recipe, and it takes mere minutes to throw together. VERY little work for such an amazing payoff!

First, the chocolate chips and Nutella are melted together in the microwave until smooth and velvety. Next, a few handfuls of mini marshmallows and almonds are stirred in until everything is evenly coated–this sinful mixture is then poured into a parchment paper-lined pan. After a 20-30 minute trip in the freezer, it’s ready to slice and serve! Or if you feel like being a savage (like myself), just remove the entire slab of Rocky Road goodness with your bare hands and bite right into it like a ginormous candy bar… 

Trust me, you’re not gonna feel like sharing these once you take a bite. In fact, I’d advise you to go ahead and double the recipe if you’re planning on sharing any of these chocolatey babes of euphoria. They’re surprisingly addictive, even though they only contain four ingredients. I’m not even a huge fan of Rocky Road ice cream, but I’ll absolutely demolish a platter of these ANY day.

With their crunchy almonds, delicious dark chocolate, fluffy marshmallows, and Nutella richness, these treats have got to have the most perfect balance of flavors and textures. Not to mention, the way each bite just melts in your mouth is nothing short of HEAVENLY.

Nutella Rocky Road

Just 4 ingredients is all you need to make this unbelievably addictive No-Bake Nutella Rocky Road!

Ingredients
  

  • 1 ½ cup semi-sweet chocolate chips
  • ¾ cup Nutella
  • 1 cup roasted salted almonds, coarsely chopped
  • 2 cups mini marshmallows

Instructions
 

  • Line an 8-inch square baking dish with parchment paper, leaving overhang on the sides for easy removal; spray with nonstick cooking spray.
  • Pour the chocolate chips and Nutella into a large microwave-safe bowl. Heat in the microwave for one minute, remove and stir. Microwave in 15-second increments, stirring each time until the mixture is smooth.
  • Stir in the almonds and marshmallows until evenly coated. Pour mixture into baking dish, pressing into an even layer. Cover and chill in the freezer until firm, about 20-30 minutes.
  • Using the parchment overhang, lift the Rocky Road slab out of the pan, and place onto a cutting board. Use a sharp knife to slice slab into squares. Serve and enjoy!

*Store candies in an airtight container at room temperature (or in the refrigerator) for up to 5 days. Candies can also be frozen in an airtight container for up to 3 months.
